It’s Complicated

My two older daughters and I watched It’s Complicated this afternoon.  This movie always draws us to the kitchen.  First we wish our kitchen looked like the one in the movie and second we all wish I could actually cook like the mom in the movie.  And who doesn’t want to own their own cute, little successful bakery that is as inviting as hers?

I don’t have my own shop to run to and whip up any type of food or dessert whenever I want, but I do know how to run to the local HEB and purchase the necessary ingredients to make “Croque Monsieur” for dinner. My oldest daughter told me we needed to either go to the Steeping Room in the Domain or make it ourselves.  We found a recipe that looked tasty and made it at home.

She wanted wine to go with our meal, so she looked up what pairs well with this french sandwich and we chose the white sparkling wine, which we loved. It was far too sweet for my husband, so he opted for a red Cabernet instead.  We all enjoyed the dinner immensely, but sadly it is time to find some healthier recipes. At least we only used one piece of bread!!  I added the recipe if you want to give it a try. We were not sure of the bechemel sauce and only used it on four of the eight sandwiches. We agreed that the sauce is needed… Bon Appetit!

“New York, New York”

Taking my two youngest daughters to New York this summer was an experience….

….An experience in navigation as I was the main adult in charge of trying to get us around the city. It made my girls a little nervous since I can still get lost in downtown Austin after living there for 18 years!IMG_7048[1]

…An experience in “fast food” as we tried to grab a quick bite in an overcrowded restaurant.  My daughters tended to sleep in late, which made us rush to our destinations on a daily basis. A bagel on the subway was our breakfast on most days!

IMG_7059[1]…An experience in being street smart as a homeless man tried to steal my money in the subway.  My daughter, Olivia, may not look tough but she did scare the man away!!  She was my hero that day!

…An experience in acting cool while seeing a celebrity crossing the street, and trying to tell my daughter to hurry and take the picture because it’s Meg Ryan…while she asks “who is Meg Ryan” ????IMG_7462[1]

…and of course an experience in cupcakes and cannoli…and finding out again that my favorite place to get a cupcake in New York is Sweet Revenge.

I do love New York City!  And I am so thankful I had the chance to experience this wonderful city with my girls.

And of course experiencing tasty sweets and Italian food makes me wish I could duplicate it all at home.  I don’t think I can match the cannoli but I will continue to give the cupcakes a hearty try.  Below are some pictures from our trip, delicious food, Empire State Building and Central Park.   I am ready to go back!

Dessert Comes First

One of the goals of this blog was for my girls to learn some basic cooking skills and also have some recipes they can IMG_6663[1]leave home with and make easily for themselves or their families one day.  

I have realized that when they finally have a home of their own…there may not be a gourmet meal on the table each night, or a healthy side of steamed veggies, but one thing is for sure…there will be dessert!

Claire, my youngest, loves to bake cookies. When she is bored, she will bake them.  When we have guests, she will bake them. Whenever I ask, she always says yes. I don’t usually get that response when I tell her we need to make dinner.

I have to admit that her cookie skills have surpassed mine.  They always come out moist on the inside, a little crunchy on the outside and she never burns them, like I tend to do.  They don’t last long around here. One day she may wish she learned more ways to bake chicken or steam veggies…but for now, she is content to be a cookie enthusiast. 

We did at least try one new main dish this month. I found a recipe for Greek Chicken Kebabs with Tzatziki Sauce. The picture of the kebabs looked appetizing, and the weather was so nice outside, which made grilling the perfect choice.  The family loved the chicken and pasta, but did not love the sauce.  I thought it was a perfect pairing with the kebabs.  Try for yourself.  It is a delicious summer recipe!

This Is Bananas..B-A-N-A-N-A-S

In our home when the bananas have turned a little too brown to eat, instead of throwing them out, as I have done many times over the years,  we now cut them up and put in the freezer for our protein shakes.

I noticed the other day that all the bananas I purchased the week before were still sitting in a bowl, turning brown. It was time to cut up and put in the freezer.  We had two large freezer bags full already.  So I decided to use them to make some banana bread.

I ran across a recipe for a banana cake first and it looked so tasty and the frosting looked as though it would  just melt in your mouth. I knew I could make this taste as good as it looked in the pictures. Here is my attempt at the cake. While the cake was very moist and full of flavor, the frosting did not quite “melt in your mouth”. The frosting did taste great, it just didn’t quite look like the one I found online. It was gone in two days though, so it was not a total failure!

My daughter, Hannah, had asked if some of her friends from College Station could stay at our house as they were in town for the weekend.  We were delighted to have them stay and I wanted to have a little snack for them when they arrived. Since my family devoured the cake earlier, I looked for a simple banana nut bread recipe.  I found one in my recipe box, it looked easy enough, I had all the ingredients and this would be something easy for our guests to grab on the go.  The recipe is actually from Amy Pruitt, a friend I have not seen in many years.  She gave it to me almost 15 years ago. Thanks Amy!  My guests loved it!

Hey Cupcake!

I bake at all holidays, special celebrations and when I am in the mood.  Today I was in the mood.  I was craving a great vanilla cupcake. I do like the ones at Magnolia Bakery so I started by looking in that cookbook. One of my favorites is their Vanilla Cupcake with Butter Cream Frosting. I do have to admit mine did not quite taste the same as I remember at their bakery.  Maybe it was just the ambiance of a bakery in New York City versus my kitchen in Cedar Park, Texas!  Maybe it was something else…but my cupcakes, for some reason, seemed a little bland.  And when my husband innocently asked if I had left out an ingredient, I knew they were not my best! 😦

 IMG_6213[1]Since that did not satisfy my craving, my daughter and I found a tasty looking Strawberry Cupcake recipe on a website called “Cooking Classy”. While the process was longer than we anticipated, the cupcake was worth the wait.   Claire was diligent in the kitchen cutting and pureeing strawberries, mixing and measuring the other ingredients, only asking once if we were done yet. She found them delicious and I was very pleased in how they turned out.   My husband didn’t even ask if I left anything out!  He commented, (with a mouth full of cupcake), “now these are really good”!

I decided to give the Lemon Cupcake recipe a try as well. I was on a roll! I found it on the same website as above and it looked so good, I couldn’t resist.  The cupcake itself turned out a little dry.  I have to take credit for that as I mixed the batter a little longer than the recipe called for.  What can I say, I was trying to do the laundry as well!   But the frosting was full of flavor!  Delicious!  I will be making this cupcake again.

The Whole Enchilada

My youngest (and pickiest) daughter rarely eats what I prepare for dinner.  I think she would instead prefer a big bowl of cereal. I know I am not a gourmet cook since some days we just have breakfast for dinner.  But there are days that I pour my heart into making a carefully planned out dinner.  When I see on her face she doesn’t want it, I can get a little defensive.  She surprised me this weekend when she saw the homemade enchiladas and instead of leaving me feeling a little deflated, she made my day!

I opened my home for a cooking lesson in homemade beef and cheese enchiladas. My sister’s co-workers spent their Saturday afternoon here learning how to make this wonderful dish from a precious woman named Maxine.  She walked in the door with her bag  full of groceries and began to work.  The rest of the crew instead began to devour the homemade guacamole and salsa along with mimosas and wine.

The recipe was very detailed and I was in charge of writing it all down to be typed up and emailed later to everyone else. It sounds like a simple task, but It was not as easy as it seems, especially with this fun group!  I was tasked with following Maxine (our master chef) around the kitchen with pen and paper among laughter, three stories loudly coming at me at the same time and various questions asked such as where a medium bowl might be, where the measuring cups are kept and do I have a potato masher for the beans?  I kept up pretty well though and hopefully I did not leave out any major instructions!

I am faithful most days to eat healthy, but after the first bite of the avocado I knew there was no use trying to show restraint.  I enjoyed myself fully and had leftovers as well.  This is when my daughter walked in and looked at the leftover enchiladas I pulled from the fridge.  She asked what was in them.  This may be a small step for most, but it was a giant leap for mom! I quickly heated them up before she could change her mind.  And much to my surprise, she actually liked them.  This makes everything worthwhile; the money spent on food, the time spent in the kitchen, the hassles of trying to write a blog when I am not a writer…she put a smile on my face!

So this was a great way to spend a few hours on a Saturday afternoon and now I have made some new friends and have another great Mexican dish to share with my family and possibly a not so picky daughter!

The SkinnyTaste Cookbook…Yum

We have been cooking out of our new cookbook for the last couple of weeks: The SkinnyTaste Cookbook.  Sounds delicious, I know. I am discovering on many of the recipes, there are a lot of ingredients and I am always tempted to take shortcuts. Since I have never been a detail person, shortcuts are easy for me. This became more evident in my first few years of marriage.  I learned to sew and make curtains for our home. They looked professional, from afar, but I would never want someone to look at the detail work on the other side, or see if the seams were perfectly straight!  I think I have the same attitude in cooking. When it says “one tablespoon” does it really mean exactly one tablespoon, or can I eyeball it?  And if I don’t like an ingredient, can I just leave it out? What difference does it really make?

IMG_5782[1]I discovered it really does make a difference!  It’s just sometimes I don’t want to chop, dice, sautè, cream, etc. And I don’t want to purchase 5 seasonings just for one little teaspoon of each. I just want it to be done!  Like the day I realized that my baked beans tasted amazingly better when I added all the onions and peppers that I was always eliminating. All those seasonings and flavors make a difference, who knew??? 🙂

Below are some of our favorite recipes we have tried from this cookbook. Everything has been tasty so far and thankfully we are discovering we can make a delicious, healthier version of some of our favorites.  While there is certainly lots of dicing, chopping, a teaspoon of this and a teaspoon of that and usually a quick run to the store, it is well worth it. Especially the time spent with my girls in the kitchen talking and laughing as we are figuring out these new meals together.

Olivia chose to make the Western Omelette. Very tasty and easy to grab and heat up in the morning.

We also made Buttermilk Oven “Fried” Chicken and Skinny Chicken Parmesan, but I forgot to take pictures!  Everyone loved both of these dishes and we will certainly make them again soon.
