My mother in law found this recipe many years ago. It is my favorite pumpkin bread recipe and so easy to make. I also add a cream cheese frosting with a few spices such as nutmeg, cloves and allspice. This really makes the recipe have just the right amount of sweetness.
Cream together: 3 cups of sugar and 1 cup of oil
Then add to this: 4 beaten eggs, 1 lb can pumpkin
Mix together in a bowl and set aside. In another bowl mix the following:
3 1/2 cups of flour
2 tsp soda
2 tsp salt
1 tsp baking powder
1 tsp nutmeg
1 tsp cinnamon
1 tsp allspice
1/2 tsp ground cloves
Mix the dry ingredients to the wet mixture, alternating with 2/3 cup of water
Bake at 350 for an hour for loaf, or 30 to 35 minutes for muffins (oven times may vary)
Be sure to place a toothpick in to make sure it is ready!
